Just an odd question but what times and how often is this server going down for its reset on average?

It will reset after 24 (real-time) hours that players have been logged in. What I mean by that is when no one is on the server, it goes into a sleep/pause mode to preserve CPU cycles and HDD read/write wear-and-tear when no one is on it - as well as stop the all-important in-game roll of years so time only moves along with people logged in to experience it. Anyway, as a result time doesn't necessary flow steady for the countdown, so the server is typically up anywhere from ~24 to ~30 hours depending on how active the playerbase is that day.
