My house bunny died two weeks after wild rabbits moved back into my yard, and yesterday a huge black cat walked around my yard. This inspired me to make a cat-shifter assassin. Would the character be stronger in the long run if it was a druid/assassin or a rogue/assassin lycanthrop?

I'd go with a Rakshasa 10/10 wizard/PM lich wielding a greatsword. Immunity to all spells level 8 or lower covers undeath to death and mass heal, and you can choose from any feline head you want. On the other hand if you're actually serious or semi serious about making this character on Thay, I'd suggest ranger/assassin for slightly higher AB, free dual wielding feats, a few spells and 2 favored enemies.

Is it worth it, though, to give up the 5d6 extra sneak attack damage, or the rogue bonus feats? Do dual-wielding feats benefit claw attacks?

Death attack damage stacks with sneak attack, so that's not a loss. As for the rogue bonus feats, they are nice, not exactly sure how nice. But I'd say the Thay implementation of assassin is better than stock NWN considering you get hide in plain sight as well as a better spell selection with 3 "slots" instead of 1.
