According to the book Red Magic most of the land west of Amruthar all the way to the First Escarpment seems to be orchards tended by slaves. I can't remember what fruit was predominantly grown, I'd have to look that up. I think it was more citrus oriented.

The tharch of Delhumide is known for raising cattle and having plantations. Again, what crop was raised there I would have to research it some more.

These are just a couple off the top of my head and certainly not the only areas. The Red Wizard control the weather over most of Thay for optimal growing of crops.
