Yes you do there is a list of the ones we use here

Well, unless there is a bug that allows you to select domains not on the list that Jechal posted (in which case I would like to hear about it), you do have to select certain domains to choose a god. In most cases these come from the Faiths and Avatars sourcebook, except for those who do not have two domains that are a part of NWN, or the god was 'dead' (like Mykrul) before that 3rd edition sourcebook was published.

Apparently there are no recruiter npc in some temples such as shar or talona

Aye, there are only a handful of Temples that are currently joinable due to the amount of text involved to make them that way. However, the system is in place to make them all joinable, it's just that I have not gotten around to completing them all. If anyone has a specific request for a temple to be joinable and you have a long-term character you plan on playing that would like to join a temple, please send me a PM letting me know. It's honestly not too difficult, it just takes a bit of creativity to come up with the text for the recruiter.

As of this post, the temples that are joinable are:
Temple of Malar
Temple of Oghma
Temple of Umberlee
Temple of Jergal
Temple of Lolth
Temple of Mask (really a guild that anyone can join)

Kossuth seems an obvious choice. Where are all the Kossuthians?

The main reason the Temple of Kossuth isn't available to join is because according to official source material, it has a rather enormous underground area where the majority of the temple facilities are located. While it is toward the top of my list of areas to work on, those areas are not finished and the Temple of Kossuth has not yet been fully designed. Completing the temple is kind of an unwritten requirement of mine before moving on to doing the text for the recruiter.

But yes...toward the conclusion of the war (if it ends well for Thay and the Temple of Kossuth!), I would like to have the temple area for it mostly fleshed out and its recruiter will be set up right away.
